Greek Salad

I found this recipe online, I tweaked it a little to my liking.

Greek Salad

romaine lettuce, chopped
red onion, thinly sliced
Kalamata olives, pitted and sliced
pepperoncinis, sliced
tomatoes, seeded chopped
cucumber, sliced
feta cheese, crumbled (There is vegan feta cheese, I never tried it, I just don’t use cheese.



1. In a large salad bowl, combine the Romaine, onion, olives, peppers, tomatoes, cucumber and cheese.

2. Prepare dressing, drizzle over top, toss, and serve.


Greek Salad Dressing

1/4 cup extra virgin olive oil
1/2 lemon freshly squeezed juice
1 tsp. Dijon mustard
1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried basil (I usually just crumble it in my hand or use the powder)
1 tsp. onion powder
salt to taste

1.) I add all ingredients of dressing to a empty jar that has a lid and shake it
2. Drizzle over salad and serve.
Serves 6.
