Mushroom and Cilantro Rice

This is a great side dish or main course. This rice is delicious and filling too!

Serves 2 people

  • 1.5 cup of white rice
  • garlic salt or fresh garlic +salt
  • 1 bunch of cilantro
  • 1 carton of portabella mushrooms (white mushrooms work fine as well)

Rinse the white rice until the water becomes clear. It is always good to get organic white rice because of the arsenic that has been known to be in white rice. Cook the rice, cover and Sautee chopped mushrooms and cilantro together in a little bit of water (half cup), the  juices from the mushrooms usually creates more water. Cook on a medium low heat, as you see the mushrooms start to soften and shrink add garlic salt. I usually put a few shakes, then I stir it, let is sit for about 5 more minutes, then I will taste it and usually add a few more shakes. It is basically to your liking taste. Don’t over due it though because it can turn too salty real quick. Add the rice to the mushrooms and cilantro, mix it in real good and serve.
